I am a lucky lady. I have quite a few 'Marvelous Mom' friends. So I have before me plenty of examples of how to be a 'M.M.'
My first example of a M.M. friend is J. She is stylish and quite thin. She knows how to cook the most scrumptious, healthful meals. Yesterday she told me and another of my M.M. friends how she cooked Thai food for dinner the night before. We were quite impressed, and put I it on my mental list of a good M.M. thing.
My husband might like Thai food. But I'm pretty sure my kids wouldn't like it. I learned about a year ago how to make home-made tortillas, refried beans, Spanish rice, Alfredo sauce with garlic (I had never even touched garlic before) and home made Mac n cheese- which happens to be the kids favorite, but because of ALL the butter and cheese, I don't make it that often. Now I feel very accomplished with these things, but I don't make them very often. Why? I don't give myself enough time to fix them before the kids (and hubby) are ravenous. Because I don't have it planed in time.
Another thing I have struggled with in planing healthful meals is i forget to add the veggies I bought to go with the main dish merely from lack of planning. In our conversation J reminded me that I needed to have a menu.
My tip this week from M.M. J is to have a menu, and plan my meals.
